You may have heard of the ketogenic diet before, but do you know where it came from and what its principle is? This diet was developed in the 1920s to treat children with epilepsy to reduce seizures. However, it is adopted nowadays, especially for fighting certain cancers and promoting weight loss. Doctors recommend it because it has tremendous health benefits for patients.

This diet is to promote foods high in fat and ban those rich in carbohydrate.

Thai Hokkaido Curry Soup with Kale
Ingredients:
-2 tablespoons of coconut oil
-1 teaspoon of cumin seeds
-1 medium onion, finely chopped
-3 ripe tomatoes, finely chopped
-1 medium-headed cauliflower, hulled and cut into bite-size bunches.
-1 hot pepper, seeded and chopped
-1 cup chopped kale
-2 teaspoons of ginger paste
-1 tablespoon cumin powder
-1 tablespoon coriander powder
-1 teaspoon turmeric powder
-1 can of whole coconut milk, unsweetened
-1 teaspoon of sea salt
-2 tablespoons chopped coriander
Step 1
In a medium pot, heat the coconut oil for 30 seconds over medium heat.

2nd step
Add the cumin seeds and stir until they start to sprout. Add the onions and cook for another minute, then add the tomatoes, stir and cook for a few more minutes until the tomatoes soften.

Step 3
Add the rest of the ingredients and mix. Cover the pan and simmer for about 15 minutes, stirring every 5 minutes so that the ingredients do not stick to the pot.

Step 4
Pour the soup into bowls and enjoy! The remains of this soup can be kept in an airtight container and kept for lunch the next day.
